Settled in the NoLL (North Liberty Lake) hub of the River District by Greenstone Homes, we share our take on beer, mead, and smash burgers! We approach these with "historical-modern fusion," combining historic brewing and fermentation principles with modern equipment, innovative techniques, and local ingredients to create an experience that will satisfy as much as it will inspire.

Who Are We?
Thomas Croskrey has been on a journey of studying, creating, and sharing distinctive styles of beers for over a decade. Now, finally, he does the same with mead. Bringing beer and mead together under the same roof was Thomas’ dream even before opening Bellwether Brewing Co in 2015. He’s been working on Emrys Beer & Mead Works since 2019 and partnered with Travis Dickinson, of Cochinito Taqueria, as a partner to oversee the food program.
We Have a Table for You

…or so says a particular dwarven warrior. Not shared as a passing sentiment; this was the hardened warrior’s dying breaths… for people to come together – to rejoice in health and happiness and fellowship – to get past the stressors and distractions of life and be people together. People are different, nobody is the same… there are many gaps and divisions that would sever our bonds. Bridge those gaps with a raised glass and a plate of hospitality. We have a table for you.

We bridge historical styles with modern techniques and variations, creating a unique style that we love to share!
Mead
Our mead blends tradition and innovation, crafted from local ingredients using time-honored methods (plus a little flair).

We step it up on some traditional dishes through a focus on processes and ingredients. You’ll see what we mean.
